The bakers must prove their pastry skills to Paul and Mary, making frangipane tarts for their signature challenge, before a Cypriot flaouna for the technical bake leaves the contestants struggling with ingredients they've never heard of and a pungent smell. The showstopper is to be constructed from vol-au-vents, but getting the puff pastry folded and chilled in time proves to be a huge challenge for some in the tent.
