SYNOPSIS

Kultura pravljenja kanazavskog jela oden neguje se u Išikavi zahvaljujući obilju sastojaka sa planina i iz mora, kao što su: povrće iz provincije Kaga, rakovi i školjke. Sastojci odena stoje dva do tri dana u supi, čiji je recept tajna.
Restorani koji služe oden postoje u Kanazavi od početka perioda Šova. Pošto Kanazava nije bila oštećena u toku rata, mnogi stari restorani koji služe oden opstali su do danas. Samo u gradu Kanazavi ima ih više od sedamdeset.
