The chef turns his attention to eggs and cheese, beginning by making a classic omelette as well as floating islands - a French dessert that uses meringue. Raymond also prepares a family-style souffle using Comte from cheesemonger Patricia Michelson, and visits old friend Eric Charriaux at his London fromagerie.
