Chefs from Wales compete to prepare the ideal starter for the Olympic banquet. This week's contenders are Stephen Terry, who prepares `the Opening Ceremony'; Richard Davies, who rustles up ravioli of quail, parfait of foie gras, roasted salsify and Madeira jelly; and James Sommerin, who hopes to impress with his sage cream, onion, chicken and Welsh Brie truffle toast. The chefs need to earn the approval of Great British Menu veteran Angela Hartnett if they are to cook for judges Prue Leith, Oliver Peyton and Matthew Fort on Friday.
