Great British Menu: Central Starter

The contest heads to the Central region, where returning contestants Aktar Islam and Daniel Clifford take on newcomer Paul Foster to prepare the ideal starter for the Olympic Feast. Dishes include pork neck with ribwort plantain and pork scratchings, veal tartare with caramelised sweetbread and burnt onions, and breast of squab with confit leg and chilli and sweetcorn shoots. The hopefuls must impress Great British Menu veteran Glynn Purnell if they are to cook for judges Prue Leith, Oliver Peyton and Matthew Fort on Friday.
