Three chefs from the South West prepare main courses to be judged by Tom Kerridge. Paul Ainsworth creates a dish called `wishful chicken', Nathan Outlaw offers up duck, barbecue monkish, rosemary, samphire and asparagus and Simon Hulstone cooks lamb with salted toffee pea mousse, shallot puree and asparagus.
