Central region chefs Aktar Islam, Daniel Clifford and Paul Foster prepare their desserts, featuring whipped sea buckthorn with meringue and crispy rice, raspberry and tarragon roulade with cookie dough and tarragon oil, and dark chocolate with raspberry jelly and sorbet.
