It is the fish course and the chefs are using some of the UK's best seafood: lobster, salmon and Cornish crab. Danny Gill is a chef who likes to use the very latest equipment to create the most intense flavours. He's going to great lengths to maximise the taste of his cucumber consommé and it is causing a lot of interest in the kitchen.
